Mock Tuna Salad
I’ve been vegetarian since I was 16 years old. That calculates out to 13 years. It’s been 13 years since I’ve eaten an animal. One thing I miss dearly and there’s no substitute in the store for is tuna fish sandwiches. I know, yuk! But I LOVED them growing up. Just tuna, mayo, and fresh white bread.
Well, I’ve found a replacement! Schumsh up a can of (organic) garbanzo/chickpeas with a fork. Add a few scoops of Veganaise. Mix it all up and spread on fresh moist Dave’s bread (I like the kind in the green bag). YUM! Had one for dinner, one for breakfast, and brought the rest of the mix to work to snack on. Can’t wait to get home and mix up a new batch!

Not the most flattering picture of me but who cares? I hiked up to 7,200’ last Sunday to Pebble Creek on Mount Rainier’s south flank. And if you do the math, that’s HALF WAY UP THE MOUNTAIN. Going to try for Camp Muir this weekend, 10,080’ into the sky.
